This course covers the digestive system, absorption, distribution, metabolism, and nutrients. Included are calories, RDA's, cholesterol, carbohydrates, proteins, vegetarian dishes, food allergies, and food poisoning. This is ideal for any complementary therapist who wishes to be able to give more guidance to their clients on healthy eating and the holistic approach. |

Detailed Study of the digestive system absorption, distribution and metabolism of food and nutrients, definition of foods, nutrients, diet, calories (energy) within water, carbohydrates including dietary fibre, fats/lipids, proteins, vitamins and minerals, function, sources, deficiencies, toxicity, effects of losses through processing, cooking, and storage. |
Cholesterol: identification and function. Relationship with diet and dangers of high levels. Foods: eggs, fish, fruit and juices, grains and legumes, meat and meat products, milk and milk products, nuts and seeds, sugars, vegetables and juices. Refined and unrefined foods: the essential differences. |

Common anti-nutrients, toxic metals, aluminium, cadmium, lead, mercury. Smoking, alcohol, tea and coffee. The pill, carbonated soft drinks, tranquillisers, antibiotics. Special RDA's for specific groups: pregnant/lactating women, adolescents, old people, vegetarians / vegans, sedentary occupations, active people, social / racial group. Food poisoning: common types and causes. |

Alternatives to common foodstuffs in relationship to allergies. Conditions such as obesity, anorexia, hypoglycaemia and diabetes. Common symptoms for very specific nutrient deficiencies. Guidelines for general healthy eating and shopping for the right food for an all-round balanced diet. |
The examination will be two hour theory paper.
ITEC qualification will count towards ITEC Holistic Clinical Honours and ITEC Complementary Therapies Diploma.
